Before the list: three of the eleven uses below involve scattering coffee on the ground, and the old version of this page carried no warning about pets. Caffeine is toxic to dogs and cats, and beans and grounds are the concentrated form of it. Pet Poison Helpline states: “One or two licks of coffee, tea or soda is unlikely to cause poisoning in most pets. However, ingestion of unused coffee grounds or beans, tea bags, or supplements could cause serious toxicity in dogs or cats.” If you have a dog that eats things off the ground, do not use coffee in the garden. With that in hand: stale beans are not spoiled beans, and the honest answer to “what do I do with them” is that most of them still make drinkable coffee — just flatter coffee. The eleven reuses below are the ones this page has always listed, but several of them were repeating claims that the research does not support, and two of them needed handling instructions they never got.

Are the beans actually too old?
Roasted coffee loses aroma over weeks rather than going dangerous. The signals worth trusting are your nose and the roast date on the bag: a bean that smells of almost nothing will brew coffee that tastes of almost nothing. Surface oil is a roast-level and age signal rather than a fault — see why some beans look oily.
The “sink or float” test this page used to recommend has been removed. It claimed that beans which float are stale. We could not find a source for that in either direction, and a roasted bean’s density depends on how darkly it was roasted and where it grew as much as on how long you have had it. Do not decide anything on it.
One thing that does make old beans unusable: moisture. If beans smell musty, look furry, or have been stored somewhere damp, throw them out rather than brewing or eating them. Stale is a flavour problem. Mouldy is not.
The eleven uses, with what the evidence says
Most of the garden claims on this page trace back to folklore rather than research. The most careful review of the actual literature on used coffee grounds in gardens is by Linda Chalker-Scott, Extension Urban Horticulturist at Washington State University: Coffee grounds — will they perk up plants? (WSU Extension, 2009). It is quoted below where it contradicts what this page used to say.
1. Deodoriser
A small open pouch of grounds in the fridge, a gym bag or a car. Cheap and reversible. Keep the pouch somewhere a pet cannot get at it — an open bag of grounds at floor level is exactly the scenario the warning above describes.
2. Compost — but cap the proportion
This one holds up, with a limit the old page did not give. WSU: “Percentages of 10 to 20 percent of total compost volume have been reported as optimal for compost quality and effectiveness, while over 30 percent can be detrimental,” and the recommendation is “using no more than 20% by volume of coffee grounds in a compost pile. A diverse feedstock will ensure a diversity of microorganisms.”
Correction: this page previously said “the acidic nature of coffee also benefits acid-loving plants.” WSU addresses that directly: “A commonly held assumption states that coffee grounds are acidic, but this does not hold true experimentally,” with measured values running from mildly acidic to alkaline, and the explicit advice: “Don’t assume coffee grounds will make an acidic compost; pH levels will undoubtedly change over time.” Do not use coffee to acidify soil for blueberries or azaleas.
3. Pest repellent — not supported
This page told you to lay a line of grounds around plants to repel ants and slugs. We are withdrawing that. WSU’s review lists repelling cats and killing slugs among the claims people make for grounds, and after reviewing the research the only pest application it reports is controlling mosquito larvae, “albeit with variable success.” Its overall verdict on grounds in the garden is that “Given the incomplete and conflicting scientific data so far, the scientific jury is still out reviewing the evidence.” Ringing your beds with coffee is also precisely the practice that puts caffeine at dog height.
4. Body scrub — with dermatology’s caveats
Grounds mixed with oil make a mechanical exfoliant, and mechanical exfoliants are not for everyone. The American Academy of Dermatology’s guidance on at-home exfoliation is worth reading before you rub coffee grounds on your face. Two lines from it matter most: “Never exfoliate if you have open cuts or wounds or if your skin is sunburned,” and “avoid strong chemical or mechanical exfoliation if you have a darker skin tone or notice dark spots on your skin after burns, bug bites or acne breakouts” (AAD, How to safely exfoliate at home). The AAD also advises applying gently in small circular motions for about 30 seconds, rinsing with lukewarm rather than hot water, and moisturising afterwards.
Practical note the old page skipped: rinse the scrub off into a sink fitted with a strainer, and bin the grounds. Coffee grounds plus oil is a drain clog waiting to happen.
5. Coffee-scented candle
Whole beans set into wax in a jar. Keep the beans away from the wick and out of the melt pool — they are dry plant matter next to an open flame, and a bean sitting in liquid wax at the wick will char. Molten wax burns skin; pour it carefully.
6. Craft material
Beans glue into frames, mosaics and jewellery, and stale ones work as well as fresh. No caveats beyond keeping loose beans away from small children and pets.
7. Scouring abrasive — with limits
The old text said grounds scrub pots “without damaging them.” That is only true of some surfaces. An abrasive is an abrasive: keep it off non-stick coatings, glass cooktops, and anything polished or plastic that shows scratches. Coffee also stains porous materials — unglazed ceramic, grout, wooden boards — so it is a poor choice anywhere you would mind a brown mark. And again: strain the sink, bin the grounds.
8. Mulch — not on its own
This is the one this page got most wrong. It recommended grounds as a mulch to retain soil moisture. WSU says the opposite: “Coffee grounds are finely textured and easily compacted,” and “Compacted coffee grounds create a barrier to moisture and air movement, especially when applied in thick layers.” Its recommendation is explicit: “I recommend against using pure coffee grounds as a mulch; instead, try using a thin layer (no more than half an inch) of coffee grounds and cover with a thicker (four inches) layer of coarse organic mulch like wood chips.”
The same review also notes that grounds inhibited seed germination in alfalfa and clovers, and inhibited growth in several vegetable and ornamental species. Keep them away from seedbeds.
9. Meat rub or marinade
Ground coffee in a rub or marinade is a real flavour technique, particularly on beef. The tenderising claim is not. This page asserted that “coffee’s acidic nature makes it an effective meat tenderizer”; we could not source that, and it sits badly next to WSU’s finding that grounds are not reliably acidic in the first place. Use it because it tastes good, not because it does something to the muscle fibres.
Standard raw-meat handling applies and was missing: marinate in the refrigerator rather than on the counter, and throw away any marinade that has been in contact with raw meat instead of reusing it as a sauce.
10. Dye
Strong coffee dyes paper, fabric and eggshells a warm brown. It is a stain, which means it will also dye your hands, your countertop and the inside of the pot you brew it in. Work over something you do not mind marking.
11. Coffee-infused oil — the one that needs a storage rule
The old page said to simmer old beans in oil, strain, and use it as “a gourmet ingredient,” and gave no storage instruction at all. Any home-infused oil needs one. University of Georgia Extension’s guidance on infused oils is the clearest published treatment: oil is an anaerobic environment, and combined with a low-acid ingredient it can support Clostridium botulinum. For infusions that have not been acidified, UGA’s instruction is that they “must be kept in the refrigerator and discarded 4 days after being made,” or frozen (UGA Extension, How to Safely Make Infused Oils).
Scope, stated honestly: UGA’s publication addresses garlic and herbs. It does not name coffee, and we are not going to claim it did. What it does establish is the mechanism and the fact that being dry is not a free pass — UGA notes that using dried ingredients, “which have little available water (lower water activity), still does not ensure that your ingredients are dried enough to provide a safe product,” because “Even small pockets of moisture could provide enough water for bacteria to survive and grow.” Roasted beans are dry, but they are not sterile and they are not laboratory-verified. Refrigerate coffee oil, use it within a few days, and treat any shelf-stable “gourmet coffee oil” recipe you find elsewhere with suspicion.
The simplest answer is still to drink them
Stale beans make weak, flat coffee, not unsafe coffee. Grind them a little finer, brew them a little stronger, and use them for milk drinks or iced coffee where the dilution hides the drop in aroma. Reuse projects are for beans you have genuinely given up on — and every one on this list is optional, which is worth remembering before you start scattering caffeine around a garden a dog walks through.
